Serves

4 servings

Ingredients

  • 1 onion, diced
  • 1 potato, diced
  • 150g spinach
  • 200g peas
  • 750ml vegetable stock
  • Fresh herbs
  • Salt and pepper

Kitchen Witch Notes

Greens are often linked with growth and restoration. Let this be a quietly practical way to welcome the season, not another thing to perform perfectly.

Serving Suggestions

Serve with bread and the first open window of the season, weather permitting.

Introduction

This soup is warm enough for the last stubborn bits of winter, but fresh enough to feel like spring has actually shown up. Frozen peas absolutely count.

Method

  1. Cook the onion gently until soft.
  2. Add the potato and stock, then simmer until tender.
  3. Add peas and spinach near the end, then blend until smooth. Season and stir through herbs.

Swaps & Variations

Add leek, watercress or a spoonful of crème fraîche. Use frozen peas if that is what you have.
